The Dettori winery is located in Sennori, in the province of Sassari, in that small land triangle called Romangia, a geographical area of Logudoro - golden place in Sardinian- as it is considered the most fertile, rich and lively part of Sardinia and has always been considered the cradle of Cannonau. In this company everything is done in the family, from the vineyard to the cellar, which is built entirely underground.

The grapes of Vermentino, Cannonau, Monica, Pascale and Moscato, come from the magnificent Cru of Badde Nigolosu, a sort of amphitheatre, at about 250 metres above sea level, surrounded by verdant hills. The soil is predominantly limestone and rich in sandstone: the set of these two minerals gives it the typical creamy white colour. The selection of the grapes is manual, the grapes are scraped but not crushed, left to macerate in cement vats without any addition of sulphurous. The must continues its path in the small concrete tanks until it is bottled, usually after two – three years, carried out with the help of all relatives.

The cellar is certified biodynamics, a company philosophy that wants nature to complete its cycle without any intervention by external agents: everything happens in the most spontaneous and genuine way possible. No milds, enzymes or any other adjuvants for vinification are added. Unfiltered, not clarified, not barricaded: the wines produced are Cru and are processed in purity: the Dettori Bianco- Vermentino; the Tuderi, the Tenores and the Dettori - Cannonau; the Chimbanta- Monica; the Ottomarzo -Pascale; the Moscadeddu - Moscato. Each bottle can be different from each other and it is good to let it express itself with its own times. If being Homo Sapiens Sapiens means looking but not observing, eating but not tasting, feeling but not listening, “sniffing a smell” and not smelling... then I'm proud to be Homo Sapiens and that's it. I feel like an animal on par with other animals. Part of planet Earth and the Universe. I want to be an animal with the slightest rationality indispensable to my freedom. That's why I make wine... it's the method I know to make me feel what I am: instinctively animal".
