Dom Pérignon

Dom Pérignon is the great name of Champagne: a high-sounding and magnificent name synonymous with elegance, luxury and prestige; a name that directly recalls the abbot Pierre Pérignon who, according to legend, invented Champagne in the 17th century in the abbey of Saint-Pierre d'Hautvillers, near Épernay, Grand Cru of the Vallé de la Marne.

The first Champagne Dom Pérignon was produced in 1936 by the Moët & Chandon maison thanks to the idea of Robert-Jean de Vogüe: the goal was to create a cuvée de prestige that embodied the absolute excellence of Champagne and that knew how to gather the great legacy of the Hautvillers abbey, owned by the Moët family since 1829. To do this, the chef de cave selected the best family reserves by bottling only the best vintages from 1921 onwards. The Vintage 1947 is the first Dom Pérignon no longer produced with the transvasage technique but born from an ad hoc harvest. Starting from Vintage 2000, Dom Pérignon acquired the status of independent maison: for some time now, the chef de cave of Dom Pérignon had been working independently from that of Moët & Chandon. The current chef de cave is Richard Geoffroy, inventor of the Oenothèque Program, later renamed P2/P3.

Champagne Dom Pérignon is produced only in exceptional years from the best grapes coming exclusively from Grand Cru and, minimally , from the Premier Cru of Hautviller. The grapes used are those of Chardonnay and Pinot Noir, considered by Richard Geoffroy as "the object of all frustrations, of all emotions, of all fascinations". The art of blending is based on the pursuit of a continuous lack of balance capable of originating tension, energy and dynamism and also on a paradox that manages to create harmony: the graceful soul of Chardonnay combined with the power of Pinot Noir. An aporia from which one of the greatest Champagnes of all time was born: Dom Pérignon.
