La Moon Import celebrated its thirty-fifth year of activity in 2015, which was an important and significant milestone, especially for those who contributed to its establishment as a leading company in an industry that, while pioneering in its early days, is now becoming increasingly saturated and therefore less focused on quality objectives and more on business.(br)(br)

Rum (known as "rhum" in French, "rum" in English, and "ron" in Spanish) is produced by distilling a fermented sugar infusion derived from sugarcane and water. If pure sugarcane juice is used as the sugar source, it results in an agricole rum of considerably higher quality, typically distilled using a discontinuous still, similar to the best cognacs and Scotch whiskies. On the other hand, if molasses, the residue from sugar extraction from sugarcane juice, is used for the infusion, it yields an industrial rum, for which a column still is commonly used.(br)(br)

All the rums in this selection come from original barrels aged in Scotland, which we have individually selected and bottled in the same location. Scotland is considered the region in the world where alcohol maturation is best and most consistent compared to all other countries. The color of the rum is determined by the duration of aging in oak barrels, as well as by the previous product contained in the barrel. For example, if the barrel previously held sherry for a certain period, the rum will absorb its tannins and have a darker color than if the barrel previously contained another distillate. The experience and expertise of the Scots in the art of whisky aging are crucial in enhancing the characteristics of a great rum.
