Bimber Distillery was founded by whiskey lovers, with a mission to produce high quality single malt whiskey with character, using traditional methods rarely seen today.
The journey begins on the farm, where it is grown 100% barley. It is then traditionally ground malted, mashed by hand, and slowly fermented for seven days in the wooden sinks that have been hand-made into the casks. Direct fire is used to heat the small copper stills and to mature the spirit in hand-selected casks. Finally, the whiskey is bottled on site at the distillery.

The artisanal approach to whiskey production passionately combines traditional methods, expertise and an absolute commitment to quality.

In addition to the production of whiskey the company produces an excellent artisan gin.
