Zymè

The Zymé winery was born in an ancient sandstone quarry dating back to 1400 AD, in San Pietro in Carlano, in the heart of the Valpolicella Classica, on the foundations of the winemaking culture of this area.  His far-sighted owner and winemaker, Celestino Gaspari, after having spent his childhood in his parents' vineyards and having acquired experience in the art of wine at his future father-in-law Giuseppe Quintarelli, has developed a philosophy, an ethic, a founded culture.  on the cornerstones of production sustainability and result excellence.

 Zymé is not a project, but a constant evolution, as symbolized by the choice of the name itself: the Greek word Zymé means precisely the ingredient of metamorphosis, yeast.  Immersed in the rock, the winery rises on three artistic levels, conceived by the architect Moreno Zurlo in perfect balance with the idea of ​​eco-sustainability of his oenologist: while in the silent depth of the cellar runs a river that carries the meteorite waters into the earth, in  top of the roofs the solar panels charge themselves with the sun's energy.

 The territorial identity and the pure love for nature are the principles from which ambitious choices have been undertaken, such as the revaluation of the ancient native vines cultivated in nine hectares of vineyards.  Looking down on the cellar, you can see the pentagonal shape of the vine leaf, emblem of the encounter between history and nature and symbol of Zymé ... For each point corresponds one of the five main elements for wine production: man,  the vine, the earth, the sun and the water.
