After fishing, the 00 caliber anchovies are processed completely by hand and only by expert personnel to become tasty fillets. The anchovies are fished in the South East Atlantic and immediately selected one by one to be salted in the barrels. Here they remain for nine months, at the end of which they are handcrafted and put in oil, in this case sunflower oil.
