The Limitada Series of the Lotamar company was created using a selection of the largest calibers of anchovies caught in the months of April and May, when this fish reaches its maximum quality.

Subsequently they are worked completely by hand and only by expert personnel to become tasty fillets. The anchovies are fished exclusively in the Cantabrian Sea in the spring months and immediately selected one by one to be salted in the barrels. Here they remain for nine months, after which they are handcrafted and placed in the characteristic tin box with olive oil.

Each brass is marked with the number of each operator and with a limited serial number.
