The Piedmontese Fassona loin is a fine cut obtained from the loin. From this cut, the Florentine steaks are obtained, a slice of the loin in the area where fillet and sirloin are found at the same time, separated by a thin T-shaped bone from which it takes the name T-Bone Steak.
Thrown by the presence of the fine fillet on one side and the sirloin on the other, it is delicious when tasted rare grilled, in a pan or baked with coarse salt, rosemary and extra virgin olive oil.
