Salva Cremasco is a soft raw table cheese, produced exclusively with whole cow's milk, with a washed rind, with a minimum aging of 75 days, with a thin, smooth, sometimes flowery rind, of medium consistency with the presence of characteristic microflora. It tends to be compact, crumbly, softer in the part immediately under the rind due to the purely centripetal ripening. White in color tending to straw yellow with increasing aging. The flavor of the pasta is aromatic and intense with more pronounced connotations as it ages.

The production area of ​​Salva Cremasco includes the entire territory of the provinces of Bergamo, Brescia, Cremona, Lecco, Lodi and Milan. The product looks like a quadrangular parallelepiped shape.

During the maturing period, which lasts for a minimum of 75 days, the wheel is frequently turned over and treated with a cloth soaked in saline solution or dry brushed, in order to maintain the characteristics of the rind and reduce hyphae, contributing to make the shape take on its characteristic color. No treatment of the rind is allowed, except for sponging with water and salt, and the possible use of edible oil and aromatic herbs.
