The “Il Brado” prosciutto crudo branded Montali is the result of careful genetic selection. The pigs of the ancient Parma breeds are born in controlled farms, and are subsequently raised in the wild in a natural way up to an age of 18/20 months in order to reach 200 kg. The typical roundness is given to the fresh legs, and a little sea salt is added with artisanal processing and seasoning, replacing the concept of "only good" with that of "absolutely special", thus giving value to the product. The pieces, by shape, appearance and scent, with careful tapping, are separated to reach full maturity.
