The Baerii is the typical Siberian sturgeon of the Lena River and is easily recognizable by its long and pointed nose. It takes 8 years to wait to get caviar from this species.
The egg diameter is about 2.5 / 2.8 mm with shades ranging from pearl gray to gunmetal gray.
The taste is soft, the fine and elegant flavor with a pleasant fragrance is sometimes accompanied by a fresh final aromatic note.
It is an extremely versatile caviar, suitable for any occasion and combination.
