Domaine Manuel Olivier

Raised in a family that has been growing blueberries and producing Cassis de Bourgogne for four generations, Manuel Olivier, in his early twenties, began producing his first wines and in a short time the Domaine took shape with around ten hectares located mainly in the Hautes Côtes de Nuits and a small but modern cellar. Respect for the territory, few interventions and grassing between the rows to preserve the microorganisms of the soil, harvesting at optimal ripeness, destemming in minimal percentages allow Manuel to enhance the complexity and expression of the terroir. The careful choice of barrels (wood grain and toasting), always linked to the climatic trend of the vintage and the specific plot, and the almost total renunciation of the use of pumps and filters contribute to obtaining fine and elegant wines.
