Paul Pernot

Domaine Paul Pernot, after a savoir faire of about two hundred years of history, is now in its sixth generation: the business is carried on by Paul's sons, brothers Paul and Michel. All the dictates matured in this wide margin of viticultural history, today allow a very high reputation of the wines coming from this domaine, traditionally attributable to an extremely natural viticulture and a vinification carried out by skilled and delicate hands, great interpreters of the use of small woods. The company is based in one of the most central squares of Puligny-Montrachet.

The Pernot vinify mostly chardonnay, but do not skimp on producing narrow and intriguing interpretations of pinot noir, almost impossible to find. It is known that an ideal sling to evaluate the activity of a vigneron are the entry products and, in fact, it is precisely the quality of their "Bourgogne blanc" that has brought us back strongly in the wake of interest in this company, which, for the truth, we always kept monitored.

The vineyard park of the domaine amounts to 23 hectares (second only to the Laflaive domaine by extension of the property) and determines a palette of 15 wines, including 11 chardonnay and 4 pinot noir.

As regards the agronomic management, it provides for free grassing (herbicides are absolutely banned) of the vines and no conventional intervention, while the winemaking style convinced us, immediately, for its extreme transparency, conceived solely to give rise to terroir wines, through uses, cum fiore salis, of small, never invasive wood, through the use of pieces of excellent quality French oak, used in percentages ranging between 20 percent (1er cru) and 40 percent (grand cru); the use of new wood is reserved only for 1er cru and grand cru, not for regional appellations and villages; the alcoholic fermentations are carried out in concrete for the base wines and always in small barrels by the villages to rise; the elevages of the chardonnays extend from 11 to 18 months.
