The Fassona Piemontese underfesa is a first-class cut, of the hind quarter, occupies the external and posterior region of the thigh, placed above the rose. Poor in connective tissue, this cut is therefore almost always used to make steaks and roast beef, and short-cooked preparations, or quality minced meat.
